Choose the page you want to keep
Paper Pro is a credible candidate when the wanted object is a dedicated writing surface for colored notes, marked-up reading and drawings. The original model's 11.8-inch display and adjustable reading light support that particular proposition. Someone who enjoys keeping a page as a visual arrangement has a different requirement from someone who must deliver all its writing as editable Chinese text.
The supported-language list matters
The currently read official handwriting-conversion list does not include Chinese. That is a reason not to promise editable Chinese output from the conversion feature; it is not a claim that a test was performed and failed. The same support article says mathematical notation and diagrams are not converted. A colorful mixed page should not be treated as one automatically editable text document.
Keep a visual result when it is the result you need
The product specification distinguishes PDF and EPUB import from PDF, PNG and SVG export. For a reader whose next step is sharing the appearance of an annotated page, that distinction can be useful. A PDF output and converted editable text still solve different tasks. The conversion guide requires Wi-Fi and a reMarkable account; it specifically associates desktop-app conversion with Connect. This does not mean every export requires a subscription.
The product that fits this reader
Consider Paper Pro when its dedicated surface, color marks and readable page are what you want to return to each day. Keep it off a shortlist whose essential requirement is officially supported Chinese handwriting conversion until that requirement is answered. The two readers can value the same screen very differently: one wants to preserve the page, while the other needs its writing to become editable elsewhere.
